UPDATE (5/29/21): This AF-C AF issue for video (where I mentioned toward the end that you can't lock focus that way) is inaccurate. You can do this by assigning AF-L to the AF-ON button. I can't believe I missed this so obvious setting!!!!! I'm going to make a follow up video correcting this.
